Beef Tortillas with BBQ & Beer Onions

INGREDIENTS

- 2x Sirloin Steaks
- 1 Oil Spray
- 1 tsp Cajun Seasoning
- 30g Butter
- 2 Red Onions
- Sliced
- 1/2 cup Beer or Cider
- 1 Tbsp Brown Sugar
- 2 Tbsp BBQ Tomato Sauce
- Tortilla Wraps
- 2x Zucchini
- Grated
- 2x Carrots
- Grated
- 1 packet
- Salad Greens
- 1 punnet
- Cherry Tomatoes
- 1 handful
- Fresh Mint
- Chopped
- 1 handful
- Fresh Thyme
- Chopped
Serves : 6
Cooking time: 25/15

METHOD

  1. Lightly spray the steaks with oil and coat in Cajun seasoning or similar.
  2. Preheat a heavy frying pan and sear the beef until done to your liking.
  3. Remove from the pan and set aside to rest, then cut into thin strips.
  4. Add butter to the pan with the onions and saute over a gentle heat for 4-5 minutes until soft and fragrant.
  5. Add beer, balsamic vinegar, brown sugar and BBQ sauce. Simmer for 5 minutes until reduced.
  6. Serve the soft tacos warm with plenty of fresh salad and top with seared beef and BBQ beer onions.
  7. Sprinkle with fresh mint and thyme, and season.
