Preheat an oven to 180°C.
To prepare the ham remove the skin with a sharp knife leaving as much of the fat as possible on the ham. Then score the ham 1 ½ cms deep creating a diamond pattern. Place a clove into the centre of each diamond. Then place onto a roasting oven tray.
In a bowl mix the mustard, maple syrup, brown sugar, bourbon, orange juice & Tabasco using a whisk.
Pour the glaze mixture over the ham and place into the oven. It will take approximately 1 ½ – 2 ½ hours to cook (depending on the size of your ham). Over this period, remove the ham from the oven at 15-20 minute intervals to baste with the glaze and juices that accumulate in the bottom of the tray.
Once cooked, remove from the oven, transfer to a board or serving plate and carve the ham thinly against the grain. Serve and if there are any leftover juices in the roasting pan, use it as a sauce.
