Preheat oven to 150 degrees Celsius
Remove skin from the ham, leaving as much fat on as possible.
Score the fat with a sharp knife all the way through to the ham in a cross pattern.
Place on a wire rack in a roasting dish.
Mix together remaining ingredients and brush onto scored fat.
Place in the oven and cook for 1 hour.
Once cooked, grill the ham on high for 3-4 minutes if you want a more charred appearance. Be careful as it will burn quickly.
