Pork loin chops with plum-glazed veges

INGREDIENTS

- 2 Parsnips
- 12 Yams
- 325 g Pumpkin
- 2 Carrots
- 2 Tbsp Oil
- 1 tsp Garlic salt
- 4 Pork loin
- 3 Tbsp Lemon juice
- ½ cup Plum jam
- 2 tsp Cumin seeds

METHOD

  1. Preheat oven to 200 degC. Place parsnips (peeled and cut lengthways), yams, pumpkin (peeled and cubed) and carrots (peeled and cut lengthways) in ovenproof dish. Drizzle with oil and sprinkle with garlic salt. Bake for 40 minutes or until vegetables are just tender.
  2. Rub pork with salt and grill until just cooked.
  3. Meanwhile mix plum jam and lemon juice together. Stir through cumin seeds. Drizzle glaze over vegetables and cook for a further 5 minutes.
